Prosciutto with Melon

Introduction

On a hot day, you need refreshing starters: such one is the Melon with Prosciutto. It could not be easier to prepare! Cut the honey melon with one of our shark knives. Remove the seeds with a spoon and slice into wedges. Wrap with Italian Prosciutto and serve with light, fresh white wine.

Ingredients

  • 1/4 (350g) rockmelon, seeded
  • 12 slices prosciutto
  • 12 fresh basil leaves
  • 12 cherry bocconcini, drained
  • Extra virgin olive oil, to serve

Preparation

  • Using a melon baller or teaspoon, scoop 12 balls from rockmelon
  • Fold up each slice of prosciutto into a bundle
  • Thread the rockmelon, prosciutto bundles, basil and bocconcini onto skewers
  • Drizzle with oil and serve

Serving Suggestion

If desired, just before serving, drizzle a tiny (no more than a drop) amount of balsamic vinegar over each piece along with a little coarsely ground black pepper.
