Prosciutto with Melon

Introduction
On a hot day, you need refreshing starters: such one is the Melon with Prosciutto. It could not be easier to prepare! Cut the honey melon with one of our shark knives. Remove the seeds with a spoon and slice into wedges. Wrap with Italian Prosciutto and serve with light, fresh white wine.
Ingredients
- 1/4 (350g) rockmelon, seeded
- 12 slices prosciutto
- 12 fresh basil leaves
- 12 cherry bocconcini, drained
- Extra virgin olive oil, to serve
Preparation
- Using a melon baller or teaspoon, scoop 12 balls from rockmelon
- Fold up each slice of prosciutto into a bundle
- Thread the rockmelon, prosciutto bundles, basil and bocconcini onto skewers
- Drizzle with oil and serve
Serving Suggestion
If desired, just before serving, drizzle a tiny (no more than a drop) amount of balsamic vinegar over each piece along with a little coarsely ground black pepper.
