Upside Down Apple Cake

Introduction
A Southern specialty - this Upside Down Caramellized Apple Cake will entice you with flavours of cinnamon, caramel, brown sugar and butter. Best served with vanilla ice cream - and of course a cup of tea or coffee.

Ingredients
- 600g apples
- 220g sugar
- 4 eggs
- 125g butter
- 250g flour
- 1/2 package backing powder
- 2 teespoons oil
- Rind of 1 lemon
Preparation
- Mix quickly in the food processor the sugar and lemon rind
- Add eggs and blend until it becomes a nice cream
- Continue blending while slowly adding the oil
- Blend until well mixedÂ
- In a separate bowl sift the dry ingredients all together (flour, powder, salt)
- Mix the dry ingredients slowly into the batter blending until it becomes a nice thick cream
- Add grated apples and blend quickly into batter just to mix
- Bake for 55 minutes until sticking a knife into center comes out clean
Serving Suggestion
This very easy to make cake requires no fancy frosting or filling and is delicious for serving at breakfast, tea time or even as a birthday cake with a chocolate or fruit glaze covering.
