Bruschetta with Fig and Goat Cheese

Introduction

Another mediterranean favorite is Bruschetta - toasted white bread spread with tomato sauce and other delicacies such as goat cheese and figs.

Ingredients

  • 1/2 coles rustic baguette
  • 1 tablespoon coles finest australian extra virgin olive oil
  • 4 Fresh Figs, quartered
  • 3 tablespoons finest red gum honey
  • 16 slices goat cheese with italian black truffle

Preparation

  • Thinly slice the baguette
  • Drizzle with oil and bake at 180°c for 5-10 minutes or until golden and crunchy
  • Set aside to cool
  • Heat a non-stick pan over a medium heat
  • Dip figs cut-side down in honey and cook until honey has caramelised
  • Top each slice of bread with coles finest australian goats cheese rolled in italian black truffle, and a fig quarter then drizzle with remaining honey to serve.

Serving Suggestion

The bruschetta should be served immediately, otherwise the delicious crispness is lost.
